We got to indulge in a lot of yummy food during our trip to India..but after a certain point, I really started craving my greens and my 'bland' yet healthy food.
Upon my return, one of my first meal was a delicious and crunchy Kale Salad. I sprinkled kale with EVOO, s&p and gently 'massaged' each leaf until it was dark green and soft - I then simply added quinoa along with apples and red bell peppers for just the right crunch. Yummmmmm!
